Fiesta Chicken Yum!

I came across this yummy dish when shopping at “Trader Joes.” They give out samples to the shoppers and I found this yummy and lean. You can’t get a dish that is more easy to make then this. Loaded with lean protein and delicious!

Ingredients…
40 ounces of chicken breast (skinless and boneless)
1 can diced, fire roast tomatoes with green chiles
1/2 jar of garlic chipotle salsa
1 can black beans, drained
1/4 cup reduced fat Monterey Jack Cheese

Arange chicken breast in large baking dish in a single layer. Season with pepper. There is enough salt in the salsa and beans. Pour tomatoes, salsa and beans evenly over chicken. Sprinkle with cheese and bake 400 degrees F until chicken is done. About 20 to 30 minutes. You can add avocado slices and sprinkle with fresh chopped cilantro for a pretty presentation and to make even tastier.

Important Note: Pay attention to the salt in the cans of salsa and beans. If you don’t have a Trader Joes you can find this types of foods, low in salt, at any major grocery store. Just be wary. Some salsas and can beans can be too high in salt, which isn’t healthy and won’t help with your weight loss goals.
